Spring Fresh: 4 Easy to Prepare Spring Dishes

Spring kind of sneaks in when it comes to food.

You don’t really decide to switch things up, it just happens. One day you’re done with heavier meals and suddenly anything fresh, quick, and a little lighter sounds better. It’s also when people start using their outdoor spaces again. You take things out, remove the Grill Covers, realize what needs cleaning, what’s still usable… and somehow that turns into a meal plan.

Anyway, these aren’t “recipes” in the strict sense. More like things you end up making this time of year without overthinking.

        Lemon + Herb Chicken

This is usually the first thing people grill after a while.

Nothing complicated – just chicken, lemon, garlic, oil, maybe herbs if you have them. Let it sit for a bit and cook it. That’s it. If you’re doing this outside, you’ll probably notice halfway through that your setup matters more than expected. A slightly messy table, nowhere to place thing, it happens. Throwing on Table Covers or just clearing space properly makes it easier to keep going without getting annoyed.

        Basic Spring Pasta

This one’s more about using what you already have.

Pasta + whatever greens are in the fridge. Spinach, asparagus, peas—anything works. Cook it, mix it, add olive oil, maybe cheese. You’ll likely carry this outside without planning to. That’s when seating becomes a thing again. After months of not using it, even adding something simple like Chair Covers or a Couch Cover makes it feel okay to sit there longer instead of heading back in.

        Strawberry Spinach Salad

This shows up every spring, and no one really questions it. Strawberries, spinach, something crunchy, something tangy. It’s quick and feels fresh without trying too hard.

If you’re eating outside during the day, shade becomes important pretty fast. Solar Shades help if the light’s too harsh, or even Outdoor Curtains if there’s wind. Otherwise, you keep shifting plates around, which gets old quickly.

        Grilled Vegetables

This one usually happens last. Whatever vegetables are left—cut them, season them, grill them. No real measurements. If you’ve got a pergola or some overhead structure, you’ll probably notice you avoid that space once it gets too bright. Adding Pergola Covers fixes that without needing to change much else.

        Somewhere Between Cooking & Leisure

That’s really what this is about.

The food is simple on purpose. It’s more about being outside a bit longer, not rushing through meals, not overplanning. You’ll adjust things as you go – move chairs, clean surfaces, figure out what works. Even small things, like keeping nearby areas covered (a Pool Cover if there’s one around, for example), just make the space feel easier to use without extra effort.

In the end, spring meals aren’t about following recipes step by step. They’re more about keeping things easy cooking what feels right, using what you already have, and spending a little more time outside while you’re at it. Some days it’ll be a proper meal, other days just something quick you threw together. If the space feels comfortable, whether that’s a bit of shade, a clean table, or just seating that’s ready to use, you’ll find yourself coming back to it more often. And that’s kind of what makes this season different.
